At Yuguo Farms, our dried shiitake mushrooms are organic and ready to be prepared for cooking. Dried shiitake mushrooms are best when rehydrated before cooking to make the mushrooms plump and remove any remaining grit. Place in hot water for 20 minutes, making sure all mushrooms are fully submerged. You can place a plate or bowl on top to keep the mushrooms in the hot water. After rehydration remove mushrooms and cook. The water from soaking during rehydration can be used as a flavorful broth. Try one of our recipes below for dried organic shiitake mushrooms.

Shiitake Mushroom & Cheddar Soup

  • 2-4 slices bacon, chopped
  • 1/2 white onion, chopped
  • 2oz dried sliced shiitake mushrooms
  • 2 cloves garlic, minced
  • black pepper to taste
  • 2 leaves fresh sage, chopped
  • 6 cups beef broth or stock (less salt)
  • 1 cup shredded Cheddar cheese


Put 2oz dried shiitake mushrooms in the hot water for 20mins to re-hydrate.
Place the chopped bacon in a large saucepan, and cook over medium-high heat, stirring occasionally until crisp, about 5 minutes. Stir the onion into the pan; cook until soft, about 5 minutes. Stir in the mushrooms, garlic, pepper, and sage; cook over medium heat until the mushrooms begin to brown, about 10 minutes.

Pour in broth or stock; bring to simmer. Simmer soup for 10 minutes. Reduce heat to low, sprinkle in Cheddar cheese; stir until melted.
